Sue Bouchier - Director
After spending many years behind the counter in our David Jones Deli, Sue now manages the administration side of the business. Keeping track of what is coming in and going out, she is based in the office at Moorabbin. pariatur.
Tom Bouchier - Retail and Operations Manager
Tom has a fresh and passionate mind on all things the industry has to offer. He can be found across all locations, either behind the counter or working on new and exciting projects. Tom has been a part of the Australian Butchers Team for 3 years, representing the country at the World Butchers Competition.
Jacqui Bouchier - Executive Assistant and Marketing Manager
Jacqui takes the lead with the company’s marketing – from branding to events, she covers all internal and external opportunities.
Jacqui also assists Peter in his daily scheduling and organisation; keeping tabs on where he is as a priority!
Felix Hoerding - Production Supervisor
Our German butcher and smallgoods maker, Felix has been a part of the Peter Bouchier team for many years. As well as taking the lead in our smallgoods production, Felix organises and oversees the day to day running of the wholesale sale operation.
Brendan Upton - Toorak Store Manager
A long standing member of the Peter Bouchier Team, our store manager Brendan is an excellent source of local knowledge and prides himself on customer satisfaction. Experimenting with flavour combinations is what excites Brendan most as a butcher. When it comes to foodie trends you can count on Brendan to have the low-down on all things new.

Carmen Mendoza - David Jones Deli Manager
After working with Sue in the deli for a number of years, Carmen is now the deli manager. Carmen is a wealth of knowledge on smallgoods and charcuterie and will do her best to ensure you are satisfied. Carmen loves to help with suggestions for entertaining guests and will be happy to guide you in your choices.
