I'm Sticking to Sandwiches
Back to school means back to the morning rush, back to washing uniforms, back to packing bags and signing diaries. However, by the time January is over, most parents are breathing a sigh of relief that they can welcome routine back into their lives.
New stationary, new school books and a fresh start to the school year for the whole family. Mums and Dads all revitalised and vowing to put more effort into the lunchboxes. Grand ideas of fresh wraps stuffed full of salads, fingers of celery, carrot and capsicum accompanied by dip, fruit salads, homemade granola muesli bars and vegetable muffins. All of these beautiful, colourful lunches lasting for about 3 weeks, before reverting back to old habits - vegemite and cheese sandwiches and a banana. It’s too difficult to make these good intentions a regular routine. We over extend our good efforts and it leaves us stressed and disappointed when we give up. That is why this year, we suggest you stick with sandwiches!
The reason we fail with the adventurous lunches is that they require too much forward thinking, and far too much prep time each and every morning, when we are already focused on getting out the door in time. Turning over a new leaf when it comes to lunches doesn’t have to be a challenge, if you only up the ante a couple of notches. Set the bar, but not too high!
Beautifying your sandwiches is a simple way to jazz up the lunchbox and it’s so much easier to stay on track with delicious and healthy food for your kids. The place to start is of course the meat. When you’re picking up dinner, grab a couple of our packets of our sliced meat, they have great use by dates, keep them in the fridge until you’re ready to use them. Ask for some fresh sliced ham, turkey, salami, etc to start the week, get enough for three days or so, then you can crack open one of the packets for the end of the week – got some left over slices on the weekend? Toasted sandwiches are a quick go-to for an easy weekend lunch.
