Meet the Team - Edmar, David Jones Store
Edmar is one of the resident butchers and store manager at our David Jones Bourke Street store. Ed arrived in Melbourne two years ago from Brazil, and has since become a valuable member of the Peter Bouchier team. With all eyes on Rio this year as the Olympic Games draw nearer, we caught up with Ed about Brazilian beef and barbecue.
Brazil is one of the world’s highest consumers of beef and the biggest exporter of beef worldwide. In the last few years, Brazil’s beef export has increased as international demand for their beef has risen dramatically. Like in Australia, with the increase in demand, the prices are also high for consumers within Brazil. Although prices are high, the Brazillian appetite remains strong for their unrivalled favourite beef cut – Picanha – Rump cap, which is the top choice for beef-eaters in Brazil. Ed explains that when working as a butcher in Brazil, their shop could hardly keep up with the demand for Picanha, it was by far their best selling beef cut. Ed would sell the Picanha with different marinades but most were sold plain for people to enjoy the steaks natural flavour.
If you have eaten at a Brazilian Churrascaria you may familiar with the Picanha, as it is prominent on many Brazilian restaurant menus. Churrasco and the churrascarias of Brazil are quintessential examples of Brazilian cuisine. The technique of Brazilian barbecue using metal rods or swords and grilling over charcoal is not only a staple in Brazil but is an essential part of any Brazilian restaurant around the world. Speaking with Ed, he suggests a couple of his favourite churrascarias that remind him of home. Rio’s in Richmond is a great Brazilian restaurant, currently relocating to Caulfield, Rio’s menu offers a great variety of Brazilian favourites. Ed’s top pick is Copacobana in Fitzroy and he often goes there when he is craving authentic Brazilian food, atmosphere and fun. It is also his top choice when he is craving a Picanha.
