Christmas side salad with sweet potato

Looking for the perfect Christmas salad to accompany your delicious meats? Look no further, try this simple and flavoursome salad that can all be prepared in advance. Simply toss each element together before serving.

EQUIPMENT
  • Oven
INGREDIENTS
  • 3 sweet potatoes - peeled and cut lengthwise
  • 6 Roma tomatoes (halved)
  • Olive oil
  • 1 tablespoon of brown sugar
  • Sea salt
  • Cracked black pepper
  • 1/2 cup of flaked almonds, toasted
  • 1 avocado, sliced
  • 3 cups of baby spinach leaves
  • Dressing:
    • 3 tablespoons honey
    • 2 tablespoons red wine vinegar
    • 1 tablespoon olive oil
METHOD
  1. Preheat oven to 180 degrees.
  2. To make the dressing, combine all ingredients and mix well. Season to taste.
  3. Place the sweet potato and tomatoes onto a lined baking tray. Drizzle with olive oil, brown sugar and season well. Roast in the oven for approx 35 mins until caramelised and cooked through.
  4. To assemble the salad: place the spinach in a large salad bowl. Top with the roasted tomatoes and sweet potato. Follow with pieces of avocado. Sprinkle with toasted almonds. Drizzle on the dressing bit by bit until well coated. Season and serve immediately.
